This recipe uses some of the Black Walnuts that I harvested from our yard this last autumn and is wonderfully versatile. Our family just went through a change in diet because we discovered we had food allergies, so this recipe is one of the few that we still use. I got the recipe from my sister-in-law and have tweaked it bit to make it work for our diet. It is vegan, gluten free and doesn't taste like sadness!
I use it basted in BBQ sauce, and then grill them for that cookout taste. I cover them in a mushroom gravy and bake them to use as an entree. I roll them into meatballs and cover in a spaghetti sauce to add to the sad selection of gluten free pasta that we haven't gotten used to yet. I cook it in a loaf pan for a hearty entree to serve with potatoes and veggies. It is really versatile and with this batch size it will last even a large family for at least 2-3 meals.
After I've pulled the burgers out of the oven and let them cool completely, I put them into gallon size freezer bags and freeze them flat. It makes it really easy to grab a bag and defrost.
Since our family has so many different food allergies dining out and grabbing fast food has been impossible. One day when we needed to travel and I grabbed a bag of frozen oat burgers and put it in the window of the minivan. We parked the car for an event and when we came back out our lunch was hot and ready to dip into some sauces (bun-less burgers were are hard sell at first until I found the right sauces).
I have struggled, in our rural area, to find GF ingredients at reasonable prices and have found that Amazon is my dearest friend in this struggle. I recommend these products because they work for our family. They don't have lots of fillers or preservatives but please read the labels and make sure they don't contain ingredients that your family is sensitive to. I'm not an Amazon affiliate, but I get most of my ingredients from there because I hate running to the store, love buying in bulk and like good deals. I found Bob's Red Mill GF Nutritional Yeast Flakes, Seitenbacher's Vegetable Seasoning, and the Gefen Chestnuts on Amazon. It's not a "natural harvest" but it is nice how it is delivered straight to my door!
