Cauliflower Fried Rice

My daughter and I are both sensitive to grains, so she eats Paleo and I eat Keto. This makes meal plans....exhausting. The more dishes that I can find where all our family dietary restrictions are met, the less work I have shopping and cooking. I do however have a very picky eater in the mix, so I have spent months pulling my hair out trying to find something simple, cheap and delicious to everyone. Finally, I found it and they can't get enough!

It took a little time to figure out how to get that cruciferous vegetable taste out so that it feels more like fried rice. I tried more soy sauce but that was way too strong, I tried more 5 spice, but that was just weird. I remembered cooking cabbage with onions, and broccoli with onions and it was savory and not strong, so I tried granulated onion to cancel out that cruciferous scent and it worked!

Here's my concoction, let me know if you've tried it and how your native population responded to it's introduction. ;)

16 oz. frozen, riced Cauliflower (you can make it yourself, but I like the convenience of frozen)

1 t. Sesame Oil

2 T. Olive Oil

2 T granulated Onion*

2 T Soy Sauce/1 T Liquid Aminos

1 C frozen Petite Peas

1 C Carrots, shredded

0.5 t Chinese 5 Spice

Heat oils in a skillet and add the cauliflower.

Sprinkle the onion granules over the top of the cauliflower until it covers.

Sprinkle the soy sauce and 5 spice over the top evenly.

Add shredded carrots and peas.

Cover with a lid until all frozen ingredients are warmed through.

Remove lid and stir fry for 3-5 minutes.

Enjoy hot and maybe try my Mao Duo recipe along with it.
